Znood el Sit. Crispy filo, ashta cream, syrup. My grandmother made this for twenty years, and I make it the same way. Fried, filled and finished in front of you.

One dessert. Twenty years of it.

We're znood specialists, not a bakery with znood on the shelf. One dessert, a family recipe out of Beirut, and twenty years of making it.

Filo folded around thick ashta cream, fried until it shatters, then straight into syrup while it's still hot. Crisp outside, cool and soft inside. It has to be eaten warm, which is why we make it in front of you instead of hours earlier in a kitchen.

Four steps, sixty seconds.

This is what your guests watch happen. It's the reason people queue.

  1. 01

    Fold

    Ashta is spooned onto filo and rolled tight by hand. No machine touches it.

  2. 02

    Fry

    Into hot ghee until the layers separate and go the colour of dark honey.

  3. 03

    Dip

    Straight from the oil into cold rose-water syrup. That contrast is the whole trick.

  4. 04

    Dust

    Crushed pistachio over the top, served warm in the hand. Eat it now.
